STEAK AU POIVRE:

Ingedients

2 Lean Beef Sirloin, Fillet or Rump Steaks
2 x 5ml sp (2 tsp) Oil
15g (1/2 oz) Butter
1 Clove Garlic
2 x 5ml sp (2 tsp) Mixed Peppercorns, lightly ground in a pestle and mortar
2 x 15ml sp (2 tbsp) Brandy
6 x 15ml sp (6 tbsp) Whipping Cream
150g Sliced Mushrooms

Method

Cover your steaks with the lightly ground peppercorns. Heat the oil in a frying pan and cook the steaks to required taste (Rare = 2 mins, Medium = 4 mins or Well Done = 6 mins. Please note cooking times may vary according to the thickness of the steaks).
Remove the steaks from the pan and keep warm. Melt the butter in pan and fry the garlic and mushrooms. Add the brandy and cook for 1 minute. Add the whipping cream, and cook over a low heat until the sauce thickens. Pour over steaks and serve with a fresh green salad or seasonal vegetables.
